Keto Egg and Sausage Bites


Personally, I am not a diet fanatic… that is unless my clients are! I recently had a client that got on the #Keto diet to prepare for his trip to Italy. I helped him lighten his diet to save room for all that delicious pizza, wine, cheese, sweets and everything else Italy had to offer. He’s an early riser, so I made sure we picked a breakfast that was well-fueled for his workouts. These #Keto egg bites use fresh sausage from Ted's Butcher Block, located right here in Charleston, South Carolina. These were DIVINE. They freeze well, too. Ultimately, my goal is to save my clients time and preparation, which these egg bites do exactly that.

Keto Egg Bites

Ingredients:

2 cooked sausages, finely chopped 12 large eggs 6 oz cheese, cheddar, pecorino romano, mozzarella or Parmesan Fresh basil, finely chopped to taste Pinch of salt and pepper, to taste 1 cup cherry tomatoes, halved lengthwise

Instructions:

Preheat oven to 350 degrees F. Line a regular-sized muffin tin with nonstick spray or butter. You can also use greased insertable baking cups.

Add a bit of sausage to the bottom of each tin. Whisk together the eggs, cheese, basil, salt, and pepper. Fill each muffin tin about 1/2-2/3 full. Place cherry tomatoes on top, and bake 15-20 minutes, rotating the pan halfway through baking time. Bake until til not jiggly anymore and slightly browned on top.
