roasted potatoes with the ultimate party sauce

I have been making this "party sauce" for many of my private events and it consistently steals the show! I made it for a bachelorette party recently and the girls tried to drink it out of their champagne glasses! It is similar to an aioli, but I use mayo as the base, rather than eggs and oil. Roasted potatoes, rolled around in Olinda olive oil are easy to eat with a toothpick. They serve as a great appetizer or side dish for a party. Check it out! These roasted potatotes with the ultimate party sauce will have your guests saying OMG.

Sauce:
1/2 cup mayo, preferably Duke's
1 tablespoon whole grain mustard
1 clove garlic, peeled and grated
1 teapoon fresh lemon juice
Zest of one lemon
2 teaspoons honey
Kosher salt, to taste
Freshly cracked black pepper, to taste
Chives, optional to garnish and/or mix into the sauce
Mix all ingredients in a medium bowl until throughly incorporated.
Potatoes:
2-3 pounds fingerling, petite, or spudling potatoes
4 cloves garlic, peeled and grated Kosher salt, to taste 2 lemons, juiced (reserve the zest for later) 1/4 cup extra virgin olive oil, I use Olinda olive oil, more or less if you'd prefer, plus some for greasing the pan
Freshly cracked black pepper, to taste
Preheat your oven to 425F.
Line a large baking sheet or two with foil and spray with baking spray or a little bit of olive oil. In a big bowl, combine the garlic, salt, juice of 2 lemons, olive oil and black pepper. It should emulsify, meaning the acidic lemon juice should create a homogeneous mixture with the olive oil and lemon with no separation. Toss in the potatoes, making sure to thoroughly coat them. Spread the potatoes onto the baking sheet, making sure they are in one even layer. Please use two baking sheets if needed to give the potatoes enough space to get crispy and beautiful. Bake for 20 minutes or so, then flip them over and cook for 20 minutes more until golden and slightly charred. Adjust the timing as needed based on your own oven. Remove the oven and serve hot. You can reheat them if needed in a 350F oven until hot! Serve with the sauce, of course.
