mini phyllo tarts with pimento cheese and bacon

These pimento cheese phyllo tarts are WICKED. The richness of the pimento cheese is cradled by crispy and delicate phyllo shells. Topped with thick-cut bacon and maybe even some chives, this recipe only has 3-4 ingredients and it very quick to prepare! When I made it for one family, I topped the cups with candied bacon. The boys kept eating all the candied bacon as I was putting it on. That is always a good sign!



1.9-ounce, 15-count phyllo shells

1/2 cup prepared pimento cheese

4 strips cooked bacon, chopped into 1/4 inch slices

Chives, thinly cut (optional)







Preheat oven to 350°. Fill each mini phyllo shell with 1 teaspoon pimento cheese. Sprinkle about 1 teaspoon of the bacon crumbles over the top of each. Transfer to a baking sheet and bake 5-8 minutes. Serve warm. Makes 15 appetizers.
